RECIPES - Series No. 2

BANANA GRANOLA PANCAKES

I toss some chopped granola and sliced bananas into my favorite pancake batter, top with butter and syrup. Mmmm. Here’s the recipe–

1 c flour
3/4 c whole wheat flour
1/2 t salt
1 T sugar
3 t baking powder
2 eggs
1 1/2 c milk
4 T melted butter

3/4 c. Nutty Steph’s granola
1 thinly sliced ripe banana

Mix the dry ingredients together (flour, salt, sugar, powder); in another bowl mix the wet ingredients well (eggs, milk, melted butter). Add wet to dry and mix lightly. Chop granola (to chop up the nuts); slice banana thinly. Fold granola and banana into batter. (You might need to add milk or flour to get it just right- should be a thick batter to hold the granola and bananas.)

Ladle onto griddle, turn once, eat with maple syrup!

VEGAN APPLE CRISP

First, finely slice six vermont macintosh apples.

Second, toss with desired amount of cinnamon.

Third, put apples in 8 inch pie plate.

Fourth, fill remainder of pie plate with nutty steph granola.

Next, bake your vegan apple crisp in the oven at 350 degrees for about 40 minutes or until you think the apples are soft.

Finally, ENJOY!

NUTTY AUTUMN APPLE CRISP

Ingredients:

8 apples (Granny Smiths are my fave!), peeled and sliced

1 cup Nutty Steph's Granola

1/2 cup brown sugar

1/2 teaspoon cinammon

1/4 lb butter, room temperature, cut into small pieces

Preheat oven to 350 degrees. Spread apples in 9x9 square glass baking dish. Add @ 1/2 cup water. In a bowl, combine Nutty Steph's granola, brown sugar, cinammon and butter until coarsely combined and beginning to feel crumbly. Spread evenly over apples. Bake for about 30 minues, or until the crust is browned.

Delicious warm or cold, and enhanced by your favorite ice cream. Enjoy!!

FRUITY GRANOLA PIE

Start with a graham cracker crust-
Fill with your favorite yogurt-
Top with chunks of your favorite fruit-

*Sprinkle with Nutty Steph’s Vermont Granola!!!

*If you are not going to consume the entire pie in one sitting, you may want to only sprinkle the granola on one piece at a time as it gets soggy on the fruit overnight.

GRANOLA AND ICE CREAM

Well, my favorite way to eat your ‘nola is in a small bowl with gobs of Breyer’s Natural Vanilla ice cream and a generous drizzling of maple syrup. No recipe required, just a strong jaw for all the great nuts! Oh, and I keep my black Lab, Cassie, on hand for cleanup afterward.


HEARTY GRANOLA BREAD

This recipe is for people who enjoy playing with their food!

1C Nutty Steph’s granola
1C boiling water
1T canola oil or melted butter
¼ c. maple syrup
2 tsp salt
2 ½ tsp active dry yeast
½ cup lukewarm milk
3 ½ cups flour (can mix white & whole wheat flour)

This makes great toast, if you don’t eat it all as soon as it comes out of the oven. Put the granola in a large bowl. Pour boiling water over it, let stand 15 minutes or until it is lukewarm. Stir in the oil, syrup, salt, yeast and milk. Mix well, then add flour to make a wet dough. It should be fairly sticky …you may not need all the flour. Add the last ½ cup only if the dough is too wet to handle. Use the rest of the flour to dust the surface you’ll knead on. Turn dough onto the floured surface and knead gently until smooth …just keep patting it into a pancake form & flopping over on itself, patting and flopping with increasing gusto as the dough gets smooth and elastic (5 to 10 minutes). Place the dough in an oiled bowl & cover with a clean cloth. Let rise 1 hour. Actually, recipes always call for an oiled bowl and a clean cloth, but you can just put it back in the dirty bowl and cover it with the t-shirt you were wearing when you got up this morning, and it will still rise. Shape into a loaf and place in a greased loaf pan. Cover and let rise until the dough fills the corners of the pan and a granola- flecked hump rises over the top of the pan (1 to 1 ½ hours). Bake at 350 for 40-50 minutes.
